Skinny Broccoli & Cheddar Turkey Quiche

[0 SP per Slice (⅛ of pie)] This quiche is super simple to whip up, and it’s perfect for quick breakfasts or dinners. Even better, all of the protein will keep you full for hours! It tastes wonderful both warm and cold, and it’ll keep for at least a week if stored in an airtight container in the refrigerator.

Ingredients

¾ cup Broccoli Florets 0 SP
1½ tsp herbes de Provence, divided 0 SP
 tsp salt 0 SP
4 oz ground turkey breast, fat-free 0 SP
¼ cup reduced-fat cheddar cheese 3 SP
1¾ cup egg whites 0 SP

Instructions

  1. Preheat the oven to 325°F, and coat a 9”-round pan with nonstick cooking spray.
  2. Lightly coat a large skillet with nonstick cooking spray. Briefly preheat over medium heat. Add the broccoli, and sprinkle with ½ teaspoon of Herbs de Provence and half the salt. Cook, stirring frequently, for 3 - 4 minutes or until bright green and tender. Remove from the pan.
  3. Evenly sprinkle the broccoli, turkey, and cheese into the prepared baking pan. Carefully pour the egg whites over the top. Bake at 325°F for 25 - 35 minutes or until the eggs have fully set. Cool in the pan for at least 5 minutes before slicing and serving.
