Chicken and Broccoli Casserole

[4 SP per serving] This cheesy, melty, chicken and broccoli casserole is comfort in a bowl. At 6 SP per serving, it is also extremely healthy.

Information

Ingredients

1 lb boneless skinless chicken breast 0 SP
10 oz frozen broccoli spears, 1 pkg 0 SP
1 can condensed cream of mushroom soup 8 SP
3 Tbsp fat free mayonnaise 2 SP
1 cup low fat shredded cheddar cheese 5 SP

Instructions

  1. Boil the chicken breast until done and drain.
  2. When cool enough to handle, cut into 1-inch pieces.
  3. In a square or round casserole dish, mix mayo and soup.
  4. Add broccoli and chicken and mix well.
  5. Sprinkle with cheese.
  6. Bake at 350°F for 20 minutes or until cheese is melted.
