Broccoli Cheddar Tots

[5 SP for 8 tots] What is better than tatter tots? Nothing.... but these come close. These cheesy, crunchy, little balls of goodness bring a smile to everyone's face.

Ingredients

1 bunch uncooked broccolini, large 0 SP
⅓ cup panko breadcrumbs 4 SP
⅓ cup chives, chopped 0 SP
1 clove garlic, medium, minced 0 SP
½ tsp salt 0 SP
¼ tsp black pepper 0 SP
1 large egg 0 SP
⅔ cup low fat shredded cheddar cheese 3 SP

Instructions

  1. Preheat oven to 400°F/200°C.
  2. Grate the broccoli with a coarse cheese grater.
  3. Transfer the grated bits to a medium bowl and season with a ¼ teaspoon of the salt. Mix the broccoli until well incorporated.
  4. Let the broccoli sit for 20 minutes until the salt has drawn out some of the moisture.
  5. Pour the broccoli into a clean kitchen towel and twist to strain as much liquid as you can.
  6. Place the grated broccoli back into a bowl and mix with the breadcrumbs, chives, cheddar, garlic, remaining ¼ teaspoon of salt, pepper, and egg, and mix until well combined.
  7. Form the mixture into 16 even-sized tots and transfer to a parchment lined baking sheet.
  8. Bake for 20-24 minutes, flipping each halfway through.
