Slow Cooker Easy Beef Stew

[6 SP per Serving] When you don’t have time to cook dinner, try this slow cooker easy beef stew recipe. All you have to do is chop a few veggies (you can do this the night before), and dump everything into the slow cooker. Cook for 6-8 hours and a delicious dinner will be on your table when you get home from work. Only 6 SP per 2 Cup serving.

Ingredients

1 lb skirt steak, lean, trimmed  24 SP
1 Tbsp Worcestershire sauce 1 SP
2 Tbsp garlic powder 0 SP
1 Tbsp black pepper 0 SP
2 cups beef broth, low sodium 1 SP
1 lb raw potatoes, cubed 10 SP
4 medium carrots, roughly chopped 0 SP
3 stalks celery, roughly chopped 0 SP

Instructions

  1. Spray your slow cooker with olive oil spray.
  2. Coat the steak with the Worcestershire sauce on both sides. Place it in the slow cooker and add the garlic powder and pepper.
  3. Add the potatoes, celery and carrots to the slow cooker. Add in the beef broth (enough to cover about 1/2 of the steak).
  4. Cook on low for about 6-8 hours, stirring occasionally. Shred the beef and serve immediately. Adjust the seasonings, if necessary.
