Fudgy Brownie Batter Protein Bars

[2 SP per Bar] These healthy, protein-packed snack bars taste like fudgy brownies! They’re great for mid-morning and afternoon snacks or curbing any chocolate cravings. The bars will stay fresh for at least 5 days if stored in an airtight container in the refrigerator.

Ingredients

 cup coconut flour 4 SP
6 Tbsp unsweetened cocoa powder 2 SP
6 Tbsp Bob's Red Mill Soy Protein Powder 1 SP
3 Tbsp Truvia Calorie-Free Sweetener from the Stevia Leaf 0 SP
¼ tsp table salt 0 SP
1 tsp coconut oil 2 SP
2 cups+
2 Tbsp
plain unsweetened almond milk 1 SP
1 tsp vanilla extract 0 SP
1 Tbsp mini chocolate chips, divided 3 SP

Instructions

  1. Line a 9x5" loaf pan with parchment paper.
  2. In a small bowl, whisk together the coconut flour, cocoa powder, protein powder, Stevia, and salt. In a separate bowl, whisk together the coconut oil, almond milk, and vanilla. Add in the coconut flour mixture, stirring until just incorporated. Fold in half of the chocolate chips.
  3. Press the mixture into the prepared pan using a spatula, and gently press the remaining chocolate chips into the top. Chill for at least 3 hours before slicing into bars.

This recipe was specifically designed for soy protein powder. Most protein powders behave differently, especially when it comes to absorbing moisture. If you substitute a different plant-based protein powder, you may need to add more protein powder if the dough is too wet OR more milk if the dough is too dry. Do not substitute whey-based protein powder; the bars will not set.
