Ground Turkey and Potato Casserole

[3 SP per serving] This casserole is simply comfort food. On a cold winter's day, it sticks to your bones, fills you up, and keeps you warm and toasty. Tastes so good, it is very hard to believe that it is healthy.

Ingredients

1 lb cooked 99% fat free ground turkey 0 SP
1 cup onions, chopped 0 SP
10¾ oz canned cream of mushroom soup prepared with water, About 1 can 4 SP
¼ tsp salt 0 SP
¼ tsp black pepper 0 SP
4 medium white potato 18 SP

Instructions

  1. Brown ground turkey and onions, drain.
  2. Spray the bottom of a 2 qt glass baking dish(11×9 inch).
  3. Cover the bottom of the dish with a layer of potatoes and a layer of ground turkey.
  4. Pour half of soup mixture over this.
  5. Add another layer of potatoes and ground turkey, pour remaining soup mixture over this also.
  6. Bake covered for 1 hour at 350°F.
