Skinny Baked Chicken Parmesan

[2 SP per Serving] Chicken Parmesan is one of my favourite dishes ever. The richness of the tomato sauce, the crispiness of the breading and the gooey cheesiness of the mozzarella just melts together into an incredible dish... with far too many point spent. This is a re-imagined version. Only 6 points each.

Ingredients

6 chicken breasts, boneless, skinless 0 SP
2 large egg whites, beaten 0 SP
1 cup fresh breadcrumbs 4 SP
1 oz Parmesan cheese, grated 4 SP
½ cup store bought marinara sauce 3 SP
salt & pepper, to taste 0 SP
2 oz mozzarella cheese, fat free, shredded 1 SP
cooking spray 0 SP

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, combine the egg whites and some salt and pepper. Mix together.
  3. On a small plate, combine the breadcrumbs, 1 oz Parmesan cheese and some salt and pepper. Heat a nonstick skillet to medium-low heat.
  4. Place each chicken breast in the egg mixture, making sure to cover both sides of the chicken. Immediately place each chicken breast in the mixture and cover both sides with the breadcrumbs. Shake off the excess.
  5. Place the breadcrumb covered chicken breast in the heated skillet and cook on both sides until chicken is cooked through, about 8 minutes. Once all the chicken is cooked, spoon a small amount of marinara sauce onto each chicken breast.
  6. Add the rest of the cheese and place in the oven for about 15 minutes. Serve immediately.

Please note: Making a home made marinara sauce would drastically reduce the sodium count but would increase the cooking time dramatically. I highly recommend simply looking for a low-sodium version.
