Single-Serving Lemon Poppy Seed Mug Cake

Ingredients

3 Tbsp white whole wheat flour 3 SP
¼ tsp poppy seeds 0 SP
⅛ tsp baking powder 0 SP
1/16 tsp salt 0 SP
¼ tsp unsalted butter, melted 0 SP
1 Tbsp Greek Nonfat Yogurt 0 SP
1½ Tbsp fat free skim milk 0 SP
¼ tsp lemon extract 0 SP
⅜ tsp Stevia, to taste 0 SP

Instructions

  1. Lightly coat a 1 cup microwave safe ramekin with nonstick cooking spray.
  2. In a small bowl, whisk together the flour, poppy seeds, baking powder, and salt. In a separate bowl, stir together the butter, Greek yogourt, and milk. Stir in the lemon extract and stevia. Gradually mix in the flour mixture, about 1 tablespoon at a time, until just incorporated.
  3. Spread the batter into the prepared ramekin. Microwave on 30% POWER for 2 minutes 40 seconds (2:40). Let the mug cake cool for at least 2 minutes to allow the centre to finish cooking through.
