Egg White Breakfast Cups

[½ SP per serving] There are only 46 calories in each cup! These are like mini quiche without any of that awful dairy to mess up the points. They are virtually free in points. Substitute whole eggs for only a few more points; 3 to be exact. Or at 2 of these for only 1 point.

Ingredients

2 cups fresh spinach
1 Whole Roma tomato, diced
2 cups egg whites
table salt, to taste
black pepper, to taste

Instructions

  1. Preheat the oven to 350˚F/180˚C.
  2. Lightly grease a muffin tin, then divide equally the spinach, tomatoes, and egg whites across 6 cups. Season with salt and pepper.
  3. Bake for 15 minutes, or until the whites have set.

Notes

Such a simple recipe, but so good to get you going in the morning. Track this as a 0 SP meal for 1 cup or 1 SP for 2 cups.
