Roasted Garlic Mushrooms

[0 SP per serving] Yes, that's correct folks, this is 0 points for each serving or only 1 point for the whole recipe! I've been looking for an appetiser that is cheap on the points but very tasty on the tongue and I came across this little gem. Reading through the recipe, the only item that could possibly give points is the balsamic vinegar! And these just taste so good.

Ingredients

1 lb fresh mushrooms, halved 0 SP
1 spray olive oil cooking spray 0 SP
⅛ tsp table salt, to taste 0 SP
⅛ tsp black pepper, to taste 0 SP
1 clove garlic, medium sized, minced 0 SP
1 Tbsp fresh thyme, minced 0 SP
1 Tbsp green onion, minced 0 SP
1 Tbsp balsamic vinegar 1 SP

Instructions

  1. Preheat oven to 450°F.
  2. Arrange mushrooms in a single layer on a large pan and coat with cooking spray; season to taste with salt and pepper. Roast mushrooms for 15 minutes and then turn mushrooms and roast for 5 to 10 minutes more, until cooked through.
  3. Meanwhile, place garlic and thyme in a large bowl. When mushrooms are done, immediately place in a bowl and toss to coat them with garlic, thyme, and onions. Add vinegar and toss again. Yields about 1 cup per serving.

Notes

There was not much to make more healthy on this recipe. Like I said, it was only the balsamic vinegar that adds points, but it just adds so much flavour. The only thing I did was to add the onions for additional flavour though you could use any combination of spices that you think would make them taste better for you and your guests.
