[1 SP per cup] Its fall folks, so let us jump on board the Pumpkin train. Everywhere I look, I see signs for Pumpkin Spice Lattes and I have to say that I love them. The problem with this is that a Pumpkin Spice Latte from Second Cup or Starbucks (even using Skim Milk) is over 10 SP per cup! I know I can't afford that amount of points on a coffee twice a day. This recipe is the solution to this problem!

Ingredients
2 Tbsp | Vanilla Flavoured High Protein powder | 1 SP |
1 tsp | Truvia Calorie-Free Sweetener | 0 SP |
2 tsp | regular instant coffee powder | 0 SP |
¼ tsp | pumpkin pie spice, or more for topping | 0 SP |
2 Tbsp | pumpkin puree, canned | 0 SP |
¾ cup | water | 0 SP |
½ cup | unsweetened vanilla almond milk | 0 SP |
1 Tbsp | Cool Whip 95% fat-free whipped topping | 0 SP |
Instructions
- Place protein powder, sweetener, coffee granules, and pumpkin pie spice in a tall microwave-safe mug or glass. Add 3/4 cup water, and mix well. Microwave for 45 seconds, or until hot.
- Stir until protein powder and coffee granules have dissolved. Add canned pumpkin, and stir until uniform.
- Add almond milk, and mix well. Microwave for another 45 seconds, or until hot.
Notes
You could make a cup of coffee instead of using the instant coffee powder. Just keep the measurement correct; only ¾ cup.Nutritional Information per Serving:
