Sweet and Sour Turkey Meatballs

[1 SP per serving] A perfect party appetiser! Having been invited to two different pot luck meals this past weekend, I was searching for something different to bring. This dish popped up, and while I was not able to make them (both meals were outside with no access to power) I do mean to make this in the near future!

Ingredients

1 spray cooking spray 0 SP
1½ lb 99% fat-free ground turkey breast 0 SP
¾ cup uncooked rolled oats 6 SP
2 large egg whites 0 SP
1 cup onion, finely chopped 0 SP
1 medium garlic clove, minced 0 SP
2 Tbsp dried parsley 0 SP
2 tsp dried oregano 0 SP
8 oz canned tomato sauce 0 SP
3 packets Sweet'N Low Low-calorie sweetener, or to taste 0 SP
3 Tbsp mustard, spicy brown 1 SP
1¼ tsp chili powder 0 SP
½ tsp hot pepper sauce 0 SP

Instructions

  1. Preheat oven to 350°F. Coat a baking sheet with cooking spray.
  2. Combine turkey, oats, egg whites, onion, garlic, parsley and oregano in a medium bowl; mix thoroughly. Shape turkey mixture into forty-eight 1-inch balls; place on baking sheet.
  3. Bake meatballs for 25 minutes. Transfer to a slow cooker and set on low heat to keep warm. Or, place in a heated chafing dish.
  4. Meanwhile, combine remaining ingredients in a small bowl. Pour over meatballs and let heat about 10 minutes. Yields 4 meatballs per serving.

Notes

The original recipe called for Extra Lean ground beef, though I recommend replacing it with the ground turkey breast as this recipe shows. Doing this reduces the SP from 3 to 2 per serving.
