Buffalo Chicken Rolls

[4 SP for 2 Rolls] These buffalo chicken rolls will not disappoint; delicious and filling! They take about 10 minutes to prepare and pop in the oven. These rolls are super spicy and not for those who can’t handle the heat. Serves 4 at 7 smart points per serving.

Ingredients

4 chicken breasts, without skin, raw, 7oz 0 SP
3 oz low fat cream cheese, softened 7 SP
1½ Tbsp Franks Red Hot Buffalo Sauce 0 SP
1½ Tbsp Light ranch dressing 2 SP
⅓ cup shredded reduced-fat Mexican-style cheese 4 SP
⅓ cup dried plain breadcrumbs 4 SP

Instructions

  1. Preheat oven to 350°F, spray a 9x9 dish with some cooking spray.
  2. Cut each chicken breast open in half.
  3. In a bowl mix your softened cream cheese, ranch, franks and shredded cheese.
  4. Brush your chicken with franks sauce and then spread cheese mixture on, about 1 Tbsp per roll.
  5. Roll up chicken and dip in bread crumbs making sure you cover all areas, seal closed with a toothpick. Some cheese mixture may try to come out the ends, its all good just try to keep it in the best you can.
  6. Lay out rolls in your dish and bake for 40 minutes.
