Turkey Lasagna

[6 SP per Serving] Ground turkey is fast becoming my favourite ground beef replacement. The texture is spot on, and the taste is amazing. Sometimes, you just want comfort food, taking you back to the days of your childhood. This lasagna is a healthy version of the classic dish you have eaten hundreds of times in your youth.

Ingredients

1 tsp olive oil 1 SP
1 medium onion, uncooked, chopped 0 SP
2 Tbsp garlic, minced 1 SP
1 lb uncooked 99% fat-free ground turkey breast 6 SP
1 tsp garlic powder 0 SP
1 tsp garlic salt 0 SP
1 Tbsp basil, fresh, chopped 0 SP
2 Tbsp parsley, fresh, chopped 0 SP
28 oz no salt added canned crushed tomatoes 0 SP
28 oz no salt added diced tomatoes, drained and rinsed 0 SP
1 tsp salt 0 SP
1 tsp black pepper 0 SP
⅓ cup Pinot Gris (Grigio) white wine 2 SP
½ cup Parmesan cheese, grated 7 SP
13 oz whole wheat lasagna noodles, about 20 noodles 31 SP
7 oz shredded fat free mozzarella 3 SP

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium sized bowl, combine the turkey, garlic salt, garlic powder, onion powder, parsley, basil, salt and pepper. Mix all together until the seasonings are well incorporated.
  3. Heat a large non-stick skillet to medium heat. Add the olive oil, onion and garlic. Cook until the onion starts to become translucent and the garlic is fragrant. Add the lean ground turkey mixture to the pan and stir, breaking the meat up as it cooks, until it's cooked through, about 10 minutes.
  4. Add the white wine, crushed tomatoes and diced tomatoes and bring this to a simmer. Simmer for about 10 minutes, stirring occasionally.
  5. Place about ⅕ of the sauce mixture on the bottom of a large 9 x 13 Pyrex or oven safe lasagna pan. Top with noodles and about ¼ of the part-skim mozzarella cheese. Sprinkle ¼ cup of Parmesan cheese on top of the part-skim Mozzarella cheese. Repeat for up to 4 layers, until all of the sauce mixture is used up.
