Kutya - Updated!

[3 SP per serving] Christmas is coming and that means Kutya in my house. This Ukrainian dish has been my tradition since I can remember. I have tried to healthy-up this recipe before (link here) but this version is much closer to what I grew up with and, due to using Truvia instead of sugar, is much fewer points. Who can resist this sweet dish on a cold morning or as the first dish in a traditional 12 course Ukrainian Christmas meal!

Ingredients

2 cups uncooked wheat berries, cleaned 36 SP
10 cups water 0 SP
6 Tbsp poppy seeds 8 SP
72 gm Truvia Calorie-Free Sweetener, ~¼ cup + 2 Tbsp 0 SP
1 cup hot water 0 SP
¼ cup chopped walnuts 6 SP

Instructions


  1. Rinse the wheat, then cover with water in a slow cooker. Make sure to add a lot of water as the wheat will soak it up.
  2. Cook on high for 4 to 6 hours or until the kernels start to burst open and the water turns a milky white colour.
  3. Drain and rinse the kernels, then add more hot water, the poppy seeds, the Truvia and the walnuts. Cook until you reduce the broth to a porridge-like consistency. (Add more Truvia to get the desired sweetness)

Notes

My Baba made this recipe a little different than most Ukrainians, she used white sugar exclusively. The "traditional" recipe uses honey to sweeten this dish. Removing the sugar (or honey) in favour of the Truvia reduces this recipe from 5 sp to 3 sp per serving.
