[3 SP per serving] Simple, easy and super delicious! You won’t believe how good this farmer casserole is. I like to prepare breakfasts for the week ahead of time and this one is very easy to reheat in the microwave or toaster oven for fast and easy breakfasts.

Instructions
- In a non-stick skillet, heat the oil over medium heat and cook the potatoes until lightly brown.
- Place the potatoes in the casserole. Top with ham, cheese and green onions.
- Mix together the egg beaters, evaporated milk, salt and pepper in a large bowl until well combined. Then pour over the potato mixture.
- In a preheated oven to 375°, bake for 45 to 55 minutes.
- Let set before cutting into 15 equal portions.
- Serve warm.
Notes
The original recipe called for 2 cans of evaporated milk, I recommend 1 can and top up much of the rest with a bit of water. As water is less thick than the evaporated milk, use at least half as much.
