Farmer's Casserole

[3 SP per serving] Simple, easy and super delicious! You won’t believe how good this farmer casserole is. I like to prepare breakfasts for the week ahead of time and this one is very easy to reheat in the microwave or toaster oven for fast and easy breakfasts.

Ingredients

6 cups uncooked potatoes, diced 20 SP
1 Tbsp extra virgin olive oil 4 SP
4 oz low-fat cheddar or Colby cheese 5 SP
6 slices uncooked Canadian bacon 3 SP
2 green onions, sliced 0 SP
12 oz fat-free evaporated milk, 1 can 10 SP
2 cups Egg Beaters Liquid Egg 3 SP
¼ tsp table salt 0 SP
¼ tsp black pepper 0 SP

Instructions

  1. In a non-stick skillet, heat the oil over medium heat and cook the potatoes until lightly brown.
  2. Place the potatoes in the casserole. Top with ham, cheese and green onions.
  3. Mix together the egg beaters, evaporated milk, salt and pepper in a large bowl until well combined. Then pour over the potato mixture.
  4. In a preheated oven to 375°, bake for 45 to 55 minutes.
  5. Let set before cutting into 15 equal portions.
  6. Serve warm.

Notes

The original recipe called for 2 cans of evaporated milk, I recommend 1 can and top up much of the rest with a bit of water. As water is less thick than the evaporated milk, use at least half as much.
