So I've been looking around for all sorts of different ways to use zucchini, and this one looks great! Have to try this side dish; a good side dish can add a lot towards turning a plate of food into a really good meal.

Ingredients
3 cups | zucchini, shredded | 0 SP |
1 cup | Bisquick Heart Smart Baking Mix | 10 SP |
½ cup | onions, finely chopped | 0 SP |
¼ tsp | ground oregano | 0 SP |
¼ tsp | black pepper, to taste | 0 SP |
½ tsp | salt, to taste | 0 SP |
¼ tsp | garlic powder, to taste | 0 SP |
2 tsp | parsley, finely chopped | 0 SP |
½ cup | Parmesan cheese, grated | 7 SP |
1 Tbsp | vegetable oil | 4 SP |
4 large | eggs, lightly beaten | 8 SP |
Instructions
- Preheat the oven to 350°F. Lightly mist a 9 x 13 baking dish with cooking spray.
- In a large bowl, stir together all listed ingredients until combined. Pour ingredients into the prepared baking dish and spread.
- Bake for 30 minutes or until lightly browned. Cut into 12 squares.
