Peanut Butter Chocolate Drizzled Cookies

[2 SP per cookie] If you love peanut butter chances are you love chocolate and peanut butter, I mean let's face it the two just go together like bread and butter! And so they should… and they should never I repeat never be apart! And so these peanut butter chocolate drizzled cookies were born…. and guess what?? They are only 2 smart points each... that's right, so go ahead and eat a few.

Information

Ingredients

4 Tbsp light peanut butter 10 SP
2 Tbsp unpacked brown sugar 4 SP
1 Tbsp white sugar 3 SP
2 tsp reduced-calorie margarine 2 SP
2 egg whites 0 SP
1 tsp vanilla extract 0 SP
½ tsp baking powder 0 SP
⅔ cup all-purpose flour 8 SP
2 squares 70% Cocoa Dark Chocolate 22 SP

Instructions

  1. Preheat oven to 350°F.
  2. Using an electric mixer cream together your peanut butter, sugars and margarine. Add egg whites and vanilla and continue mixing. With a spoon mix in your baking powder and flour. The dough will be thick and sticky.
  3. Roll into 24 mini balls and place on a sprayed parchment lined cookie sheet.
  4. Press down on each cookie with a fork.
  5. Bake in the oven for approximately 10 minutes. Meanwhile melt your chocolate in the microwave in a small safe dish for 35-second intervals, turning each time until melted. Remove cookies from oven and using a spoon, drizzle with chocolate,
