Bloomin' Apples

[6 SP per Serving] A friend posted a recipe on Facebook that looked absolutely amazing, and I had to know just how many SPs the recipe was. In the original form, it was close to 10 points per apple, which is not too bad for a desert, in this modified recipe, I was able to bring it down to 6 for each apple. Fewer points than a slice of pie and this looks like it will taste much better!

Ingredients

4 Tbsp light butter, melted 14 SP
1 Tbsp brown sugar, unpacked 2 SP
1 Tbsp white sugar 3 SP
½ tsp ground cinnamon 0 SP
4 medium green apples 0 SP
1 Tbsp caramel topping 3 SP
¼ medium lemon 0 SP

Instructions

  1. Preheat oven to 375°F and grease a medium baking dish with nonstick cooking spray.
  2. In a small bowl, whisk together butter, brown sugar, sugar and cinnamon.
  3. Slice off the top of each apple and then use a melon baller (or a teaspoon) to scoop out the core. Using a paring knife, make three circular cuts in the apple. Place the apple cut side-down on a cutting board and slice crosswise.
  4. Place cut apples in a small baking dish. Fill each apple ¼ of the caramel then brush melted butter mixture on top. Bake until the apples are tender, about 30 minutes.
  5. (optional) Serve with Vanilla Icecream and drizzle extra caramel over the top (this will add extra points).

Notes

The original recipe called for much more caramel and used whole fat butter. I also recommend that you leave off the caramel drizzle and ice cream for those of us who are points conscious.
