Double Chocolate Banana Muffins

[3 SP per muffin] If I have some banana's looking like they are on their way out you can bet it's going to be a baking day! I was in the mood for muffins…and chocolate. These double chocolate muffins are delicious, full of chocolate flavor and nice and moist.

Information

Ingredients

3 Tbsp sugar
1 large egg
2 Tbsp egg whites
3 medium bananas, ripe, mashed
¼ cup unsweetened applesauce
1 tsp vanilla extract
1¼ cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
3 Tbsp mini chocolate chips

Instructions

  1. Preheat oven to 350°F, spray a 12 hole muffin tin and set aside.
  2. In a large bowl using an electric mixer beat together your sugar and egg plus egg whites.
  3. Stir in your mashed bananas, apple sauce and vanilla, mix well.
  4. Mix in your flour, cocoa, baking powder and soda, fold in your chocolate chips.
  5. Divide into 12 regular sized muffins, bake in oven for 18-20 minutes.
